Almond Alkaline Flax Rounds

These grain-free, gluten-free, Vegan treats are power packed with protein and are great for breakfast or a nutritious snack.  I like to make a big batch before I travel as they are great on the go.  Top them with a little nut butter or honey for added satisfaction or just enjoy as is.  You will soon want to have these delicious rounds as a staple in your refrigerator.

Makes 20 rounds


2 cups almond flour (blanched)

1 scoop Sunwarrior Vanilla protein powder

Flax eggs – see directions below

1 tsp. Himalayan salt

1 tsp. Vanilla extract

2 tsp. Cinnamon

2 tsp. Pumpkin spice

2 tbsp. Xyla

2 tbsp. Melted Coconut Oil

1 tbsp honey

½ cup pecans, walnuts, or almonds – chopped

½ cup pecans, walnuts, or almonds to place on top of each round

¼ cup shredded coconut to sprinkle on top of each round - optional

Flax eggs:

1 cup Ionized Alkaline Mineral water -warm

6 tablespoons ground flax seed

Mix flax seed into warm water and let sit for a few minutes so it forms a gel consistency.

Directions:  Heat oven to 350 degrees.  Cover baking sheet with parchment paper. Mix all ingredients together in a medium sized bowl.  Make 20 balls with the dough and then press into circles. Top with a nut and sprinkle with shredded coconut.  Bake for 20 minutes then remove from oven and let sit for 10 minutes.  Check at 15 minutes to see if they are done.  Once they are browned, they are done.  Allow to cool fully if you are going to freeze them. Top with honey or nut butter for an added palate pleasure!  Store in the refrigerator.
