Berry Yummy Raw Jam

 

 

You can enjoy this recipe now or plan ahead and freeze your summer berries to use later in the year.

Freezing is another way to preserve your berry bounty. All berries can be frozen whole. In order to avoid having your berries stick together upon being frozen, lay them out in a single layer on a cookie sheet. Place the cookie sheet in the freezer. Once the berries are frozen, transfer them to airtight freezer bags or containers.

Berries can also be pureed in a blender and then frozen in airtight freezer bags or containers.

Directions:


Simply add 1 cup thawed (or fresh) berries, 2-3 Tablespoons agave nectar or other sweetener, and 1 Tablespoon Psyllium powder to a blender. Blend until smooth. Refrigerate for an hour to allow the jam to thicken.

Raw berry jam is delicious when added to breads, crackers, cookies, and pancakes. It can also be used as a scrumptious topping on raw ice cream.
