Blueberry Bliss

Serves 2 for a snack or 1 for a meal replacement


1 cup frozen blueberries

½ medium avocado

1 scoop SunWarrior Vanilla flavored protein powder

¼ cup almond milk

Juice of ½ lime

1 teaspoon inositol powder -optional (helps with blood sugar regulation)

1 teaspoon vanilla extract

2 tablespoons Xyla

1 tablespoon chia seeds

½ cup raw almonds (soaked for at least 6 hours) – chopped - optional


Directions:  Place all ingredients expect almonds in food processor.  Process with “S” blade until well blended.  Transfer to two small bowls or one medium-sized bowl and top with a few extra blueberries and chopped almonds if you want extra protein and/or texture.  If you are using this a a meal, I encourage you to add the almonds.  If you want an added nutritional benefit, break open some pro-biotic capsules (1 or 2) and mix in the powder into the blueberry mixture.  Place in freezer for a few minutes if you want it a bit firmer or just enjoy right way.
