Chia Seed Key Lime Pie

This is a delicious pie that can be eaten any time of day.  It is diabetic friendly and will become a household favorite in no time!

Crust:

1 cup unsweetened shredded coconut

1 cup walnuts

½ cup currents

¼ tsp. Himalayan salt

1 tsp. vanilla

Dash of cinnamon

2 tbsp. Ionized Alkaline Mineral Water to start and add more as needed

Filling:

3 semi soft avocados (medium size)

Juice of 4 limes and one extra lime to slice and decorate with

2 tbsp. Xyla

2 tsp. organic maple grade b maple syrup

¼ tsp. Himalayan salt

1 ½ tbsp. melted coconut oil

¼ cup chia seeds

1 tsp. non-GMO soy lethicin

2 tsp. inositol powder

Directions:  For crust place ingredients listed above in a food processor with the “S” blade and pulse blend a few times then process until it starts to stick together a bit. Add more water as needed but do not add too much.  Once you can easily bind the crust (pinch with fingers to test) you are done processing.  Press crust mixture into bottom of a 9 inch pie pan and place in freezer to harden while you prepare the filling.  For the filling, place all ingredients except chia seeds in a food processor with the “S” blade again and process until smooth.  Mix in chia seeds and pour over crust.  Set in fridge for an hour. Decorate with lime slices and enjoy.
