Chocolate Chip Nut Butter Cups

October is here and the stores are filled with candies loaded with refined sugars.  I created this little cup of comfort for all those wanting to indulge a little without stressing out your body.  This is a gluten-free, soy-free, dairy free, and vegan treat that tastes so good!

Makes three large cups or 6 mini cups / double the recipe if you want some extra


  • ½ cup organic chunky peanut or almond butter

  • ¼ cup mini chocolate chips by Food For Life plus a few to sprinkle on top of each cup

  • 1 tsp. coconut oil

  • 1/8 tsp. vanilla extract

  • Dash of cinnamon

  • Cupcake wrappers – regular or mini size

Directions:  Mix nut butter, coconut oil, vanilla and cinnamon in a small bowl.  Add the chocolate chips and mix well.  Spoon equal amounts of the mixture into the cupcake wrappers.  Top with a few more chocolate chips.  If you want to get fancy and have a little more time, melt a few of the chocolate chips and pour over the top of each.  Refrigerate for an hour so they firm up.
