Chunky Chocolate Coconut Pudding


I have been having a blast experimenting with new ways to use coconut oil.  The more I learn about this magical oil, the more my body craves it!  This pudding is fun because it has lots of texture great taste.  You can use this as a pie filling as well.



  • 1 large ripe avocado or 1 cup avocado meat
  • 7 dates – soaked until soft (at least 15 min.) then pitted
  • ½ c raw cocoa powder
  • 1 tsp vanilla extract
  • 1 ½ tbsp coconut oil – softened or slightly melted
  • 1-2 pinches sea salt
  • ½ cup plus 1 tbsp raw agave
  • ½ cup shredded coconut


Directions:  Put all ingredients except coconut into food processor with S blade.  Blend until well mixed.  There will be chunks of dates.  Add shredded coconut and mix for a few seconds more.  Refrigerate for at least one hour. 

 I like to serve this delicious pudding in martini glasses topped with chopped almonds – it’s definitely a crowd pleaser!
