Fall Farmer’s Market Bowl

I made this to celebrate the first day of Fall! The green beans, asparagus, raw almonds are from a local farmer’s market. If you have a farmer’s market near you, please treat yourself to a trip there as it is so fun to buy right from the growers!
Serves 2 for a meal or 4 as a side dish
Ingredients:
• 1 bundle asparagus – snap off bottom part of stems then cut into small pieces
• 2 cups green beans – snap off tips then cut into small pieces
• 1 cup raw pumpkin seeds – soaked for 3 hours then drained
• 1 cup raw almonds – soaked for 3-6 hours then drained
• 1-2 tblsp. Olive oil
• Juice of one lime
• 1 glove of garlic – minced
• 1⁄4 tsp. turmeric
• 1⁄4 tsp. Italian spices
• 1 tsp. Himalayan salt
• 1⁄2 avocado – cut into small slices to top each serving
• 1 cup cooked brown rice
Directions: In a medium frying pan, heat olive oil on medium heat. Add green beans and sauté for 1 minute; add asparagus, turmeric, salt, lime, Italian spices and sauté for 2 more minutes. Add the seeds and almonds and mix in well and sauté for another minute. Turn off heat. Place 1⁄2 cup brown rice in a bowl and mix in half of the veggie seed and nut mixture. Then repeat with another bowl for the second serving. Top with avocado slices and serve.
