Fall Sweet Potato Slices

  • 2 Large Sweet Potatoes
  • 1 tablespoon of coconut oil
  • Himalayan or sea salt
  • Turmeric

Directions:  Warm oven or toaster oven to 350 degrees.  Wash potatoes and dry.  Poke holes in each potato with a fork.  Wrap in foil.  Place in oven for 40 minutes.  Cool.  Unwrap the potatoes and slice them (1 inch slices).  Grease bottom of cookie sheet with coconut oil. Place potato slices on the baking sheet and lightly rub on the rest of the coconut oil. Sprinkle with salt and turmeric.  Bake until a fork easily goes through each slice.  They will get slightly crunchy.  I love to serve these slices with kale sautéed in coconut oil.
