Italian Cheese Stuffed Tomatoes



Ingredients: 

  • 1 cup soaked cashews
  • 1/3 cup water
  • ½ tsp sea salt
  • 1 tbsp nutritional yeast
  • 2 tbsp basil
  • ¼ cup sun-dried tomatoes
  • ¼ red onion chopped
  • Juice of half a lemon
  • 1 tsp onion powder
  • 1 garlic clove
  • ¼ cup black olives
  • ½ cup cilantro

Directions: 
  1. Process the cashews, garlic and sun-dried tomato flakes.
  2. Add the water and and all the other ingredients except for the red onion and black olives.
  3. Add them at the end so they are not over processed.
  4. Garnish with cilantro and cucumber wedge.
