Lemon-Garlic Asparagus

When Asparagus are in season, this is definitely as staple dish in our household. So simple and delicious. It's great with the pumpkin seed pesto wrap, the sweet potato surprise, or any other dish you make. If you want to keep things simple, just eat as is with a little side of quinoa and pumpkin seeds.


1 bundle of Asparagus

1 large clove of garlic -minced

1 lemon - ½ juiced and ½ sliced for garnish

1-2 tbsp. Olive Oil

Himalayan or Sea Salt and Pepper to taste

Directions: Break off bottom part of asparagus stems. Steam asparagus and drain water out well. Place back in pot and drizzle with olive oil. Pour on lemon juice and add garlic. Lightly salt and pepper and cover for a few minutes so the garlic sets in. This can be eaten warm or cold.
