Lemon Scented Quinoa


  • 1 cup un cooked quinoa (prepare according to directions on box)
  • 2 tablespoons olive oil
  • 2 gloves garlic - minced
  • 2 cups chopped spinach
  • 1 onion – chopped
  • 1 cup parsley – chopped
  • ½ cup fresh basil - chopped
  • 1 tsp sea salt
  • 1 tablespoon Miren Rice Cooking Wine
  • Juice of one lemon
  • 2 tsp lemon zest
  • ½ cup pine nuts or raw almonds (if using almonds, chop them up)

Directions: Prepare Quinoa and set aside.  Heat olive oil on medium heat in a large skillet.  Add in onion and garlic.  Sauté for 2 minutes.  Add in spinach, basil, Miren, and parsley and sauté one more minute.  Add salt, lemon zest, lemon juice and sauté one more minute.  Add in nuts and quinoa and mix all the ingredients together in skillet.  Serve warm or at room temperature.
