Mojito Smoothie

This is such a fun springtime smoothie.  It is fresh and satisfying.  Enjoy!

Ingredients for 2-3 smoothies:

Directions:  Crack open the coconuts and pour water into a container and set aside 2 cups for the smoothie then refrigerate the rest for later use.  Scoop out the coconut “meat” and place in high-speed blender with the rest of the ingredients.  Blend until smooth.  Enjoy right away or bottle up for later use.  Will keep for 3 days in the refrigerator. 

Note:  Use less coconut water if you want a thicker smoothie.
