Protein Packed Pasta



This a super simple and very satisfying dish.  The main ingredient is a lentil bean pasta.  Serve with a side of steamed broccoli for a quick and easy dinner.
Serves 3


Ingredients:

1 Roma Tomato

1 package Bisogno  Lentil Pasta– this is a handmade gluten free pasta that comes in three flavors (beet, spinach, or lemon parsley.  It has 19g protein, 23g net carbs, and 3g sugar per serving)  I found this at Whole Foods Market.

2 cups baby spinach – chopped

1 cup parsley – chopped

¼ cup fresh basil – chopped

2 cloves garlic – minced

Sea salt & ground pepper to taste 

olive oil


Directions:  Prepare pasta according to directions ( I like to cut the pasta into smaller pieces before boiling).  Drain pasta, drizzle olive over pasta.  Add spinach, parsley, basil, and garlic.  Mix well. 
Top with sea salt and pepper.  Decorate with tomatoes and gobble up!
