Pumpkin Seed Pizza!

This Vegan pizza is high in protein and low in sugar and carbs.  It is easy to make and tastes great.  It’s a great choice for those working with blood sugar level issues (i.e. pre diabetics or diabetics).  I like to have this for breakfast, but you can enjoy it any time of the day.

Serves 2


  • 1 sprouted brown rice tortilla by Food for Life
  • ½ -1 cup organic pizza sauce (start with ½ cup and add more if you life it saucier!)
  • ¾ cup raw organic pumpkin seeds – soaked for 6 hours then drained
  • 1 ½ cup chopped baby spinach
  • ¾ cup non-dairy cheese of your choice (I use almond cheese)

Directions:  Take out a baking sheet for the oven or toaster oven.  Place tortilla on the baking sheet and add pizza sauce on the tortilla.  Layer on the soaked pumpkin seeds and then the non-dairy cheese.  Top with Spinach.  Place in pre heated oven @ 375 degrees for 12 minutes. My toaster oven has a “Pizza” button that will automatically set the temp and time for a pizza that I use.  Use kitchen sheers or pizza cutter to cut in half then cut each half in three sections.  Cool for 1 minute then enjoy right away.
