Salsa Bites

This has been one of our favorite summer snacks.  It is a great way to use up your pulp from the green juices you make.  

What You Need:

• Pulp from Green Juice
• Avocado slices
• Fresh Salsa

Ingredients for Raw-Vegan Crackers:

1 cup juice pulp from a green juice:   I usually juice parsley (big handful) , celery (3 stalks), kale (6 leaves), lemon (2 peeled) , apples (one green and one red), and ginger (one inch) for this recipe.

• 1 cup shredded carrot
• 1 big handful baby spinach
• ½ cup sunflower or pumpkin seeds
• ¼ cup olive oil
• ¾ cup fresh salsa
• ½ teaspoon sea salt

Note:  You can also add flax or chia seeds

Directions:  Add all ingredients to food processor using “S” blade until well blended. Spread out over teflex dehydrator sheet until about ¼ inch thick.  Place on mesh dehydrator tray and put in dehydrator on 110 degrees for 3 hours.  Flip onto mesh tray only and dehydrate for 4-8 hours more, depending on how crisp you want them.  Remove from dehydrator and let cool for 3 min. Break into pieces or use kitchen scissors to cut into the shape you want.

Note:  If you do not have a dehydrator. Check out the raw food section in your local natural foods store and get some raw flax crackers or other raw cracker.

Top with Avocado and salsa and enjoy!!!
