Simple Spinach Wrap

In need a delicious and quick snack or meal?  I love this for breakfast but you can enjoy it anytime. 

Ingredients:

  • 1 gluten-free spinach tortilla by Rudi’s Gluten Free Bakery
  • 1 serving of non-dairy cheese of your choice
  • Handful of baby spinach
  • ¼ cup sprouted pumpkin seeds
  • 3 slices of an heirloom tomato

Directions:  Heat toaster oven to 350 degrees.  Place the cheese, pumpkin seeds, and spinach on the tortilla.  Place tortilla on a baking sheet and bake for 3 min.  Remove and add the tomato.  Wrap and eat.
