Simple Summer Stir Fry


  • 1 head of brocollini - chopped
  • ½ head of green cabbage – shredded
  • 4 carrots – sliced
  • Coconut oil
  • 1 tablespoon maple syrup
  • 1 teaspoon of sea salt
  • Optional:  1 ½ cup firm tofu – cut into small cubes


Directions:  Place desired amount of coconut oil in large pan.  Turn on medium heat and add tofu and brown it. Transfer to a bowl and set aside.  Add more coconut oil and add carrots. Saute for 2 minutes.  Add brocollini and sauté for 3 more minutes.  Add cabbage and sauté for 2 more minutes.  Add tofu back in pan and toss into vegetables.  Add maple syrup and sea salt and mix again. 

Serve over quinoa or brown rice for a complete meal
