Simple Summertime Quinoa

This is such a simple and easy Alkaline recipe and it great to enjoy on a picnic as it does not need to be heated. If you want a lighter version, omit the seeds and nuts.


• 1 cup quinoa – cook as directed on package and add in 2 tsp. turmeric to the water

• 2 cups chopped spinach

• Large handful of parsley – chopped

• 2 cups broccoli – chopped

• 2 cloves garlic – minced

• Juice of 1 lemon

• 1⁄2 cup pumpkin seeds (soaked for at least 3-6 hours, then drain)

• 1 cup raw almonds – chopped (soak for at least 6 hours, then drain)

• Sea Salt to taste

• Flax oil to taste

Directions: Make quinoa. Let it sit for 10 minutes to cool a bit. Meanwhile, chop all veggies and marinate them in the lemon juice and garlic. Drizzle on some flax oil. Add in the warm quinoa and mix well. Salt to taste. Feel free to add olives, tomatoes, red peppers, etc.
