Strawberry Quinoa Breakfast Bowl

This is a protein packed breakfast or snack that can be served warm or at room temp. 

Ingredients for one serving:

  • 1/3 cup cooked quinoa
  • ¼ cup organic raw pumpkin seeds – soaked at least 3 hours then drained
  • ¼ cup organic raw almonds – soaked at least 6 hours then drained
  • 1 tsp. cinnamon
  • ½ tsp. vanilla
  • Dash of Himalayan salt
  • 1 tsp. Xyla (xylitol product) or Stevia
  • 1 cup unsweetened almond milk
  • ¼ cup unsweetened coconut flakes
  • ½ cup sliced organic strawberries

Directions:

For a warm bowl place quinoa pumpkin seeds, almonds, cinnamon, salt, vanilla, Xyla, and almond milk in a baking dish.  Bake at 350 degrees for 20min.  Remove from oven and transfer to a serving bowl.  Top with strawberries and coconut flakes. 

For a room temp bowl, simply put all ingredients in a bowl, mix, and serve.
