Summer Caesar Salad

 

Makes 2 Meal Salads

 

Salad:

  • ½ Head of Romaine lettuce – sliced thin like confetti
  • 1 ear of corn raw or slightly steamed – cut corn off cobb
  • 1 cup Broccoli sprouts
  • ¼ package of Beyond Meat strips – looks like chicken strips but is made from Vegan protein and vegetables
  • ½ avocado – cut in chucks

 

Directions:  Prepare Beyond Meat strips (I use the grilled flavor) as directed on package and cut into chunks and set aside.  Place lettuce in medium sized glass bowl.  Add the rest of the salad ingredients.  Top with the Beyond Meat chunks.  Prepare dressing below or use dressing of your choice and toss into salad and enjoy!

 

Dressing:

  • 1 part olive oil to 2 parts apple cider vinegar (ie. 2 tablespoons olive oil to 4 tablespoons apple cider vinegar.  Make what suits your needs)
  • 1 tablespoon Veganaise (I use the low-fat brand made with grape-seed oil)
  • 1 clove garlic – minced
  • Salt and pepper to taste

 

Directions:  Whisk all ingredients together and pour over salad.  Toss and serve immediately.
