Tasty Tostadas



These are my all time favorite tostados!  

You can use romaine lettuce leaves if you want a lighter “taco”.  
This is a great party pleaser!

Nut Taco Meat:

•    1 ½ cup brazil nuts
•    1 cup sun-dried tomatoes – can use oil packed that are drained or re-hydrate your own
•    2 tablespoons raw tahini
•    2 tablespoons Mexican seasoning (1 tablespoon if using Parma)
•    2 tablespoons Chipotle Cayenne Parma by Eat in the Raw (optional – I get this at my local food co op)

Tostada shell:

•    Red cabbage leaves

Toppings:
  cilantro, chopped tomatoes, avocado chunks, olives, red onions, shredded carrots

Directions:  Place all nut taco meat ingredients in food processor and pulse blend with S blade a few times.  Then blend for about 5 seconds.  Meat should be chunky.  Place desired amount of taco meat in one red cabbage leaf and cover with your favorite toppings.
