Tofu Scramble





Directions:  Open tofu and drain off excess water.  Set aside.  Heat olive oil on medium and break tofu into small chunks with your hands into heated oil.  Brown tofu.  Add turmeric and paprika.  Continue to toss around tofu in pan for a couple more minutes.  Add nutritional yeast, mirin, and Braggs and continue to cook tofu for a few more minutes.  Top with cracked pepper.

I like to heat mini corn tortillas and top them with the scramble and top with salsa or chopped tomatoes.  You can also add avocados.

Feel free to add in onion, bell peppers, etc.  Personalize it to suit your taste.
