Vegan Nacho Pie
This is a simple and yummy treat that can be served as appetizer or a main meal. Be careful, it’s addictive!
Ingredients:
- Gluten-free tortilla chips – enough to fill the bottom of a glass pie dish
- ½ package Beefy Crumbles by Beyond Meat – I get the fiesta flavor and they can be found in the frozen section at Whole Foods
- 1 tbsp. olive oil
- ¾ cup Vegan cheese of your choice
- 1 avocado – peeled and pitted
- Juice of ½ lemon
- 1 glove garlic minced
- 1 cup black beans – ready to eat and drained
- 1 roma tomato – chopped
- ½ cup salsa
- Salt and pepper to taste for the guacamole
Directions: Preheat oven to 350 degrees then make guacamole. See directions below. Heat olive oil on medium high in a stir fry pan, and then add beefy crumbles. Sauté for a few minutes. Add the black beans in the same pan and heat. Meanwhile, Place chips in the pie dish. Cover with Vegan cheese and place in oven until the cheese is melted. Remove from oven and layer with beans, beefy crumbles, guacamole, and tomato. Feel free to add olives, jalapenos, etc.
Guacamole: Mix avocado, garlic, lemon, and salt and pepper to taste in a bowl.
