Vegan Stroganoff

This is such a delicious comfort food made healthy.  Enjoy this old fashioned dish with Vegan and Gluten-Free flair.  It is satisfying, yet won’t leave you feeling lethargic.  Bon Appetite!

Serves 4


Note:  For Pasta – once prepared, drizzle on some olive oil and toss in some chopped parsley.  Add a pinch of Himalayan salt and pepper and they good to go.  You can also serve over brown rice or quinoa.

Directions:  Heat olive oil on medium in large sauté pan.  Add in onion and mushrooms and sauté for 4 minutes.  Add in garlic and beefy crumbles and continue to sauté for 3 more minutes.  Add in broth.  Stir in tapioca starch and stir to thicken the broth.  Add in sour cream, salt, pepper, and dill.  Continue to stir, reduce heat to low, cover, and continue to cook for a few more minutes to let the flavors blend together.  Meanwhile, prepare the pasta.  Pour stroganoff over noodles and enjoy.  Use brown rice or quinoa as a substitute for the pasta if you prefer.  It’s also good all on its own.
