Veggie Fajitas with nutty Sour Cream

1 Swiss chard leaf

1 green pepper

1 red pepper

½ onion

1 chopped tomato

¼ cup cilantro

2 minced garlic cloves

2 tbsp olive oil

½ tsp cumin

½ tsp chili powder

1 tsp sea salt

1 avocado


Sour cream


½ cup macadamia nuts

3 tbsp lemon juice

2 tbsp raw apple cider vinegar

½ tsp salt



Place all chopped ingredients in a large bowl and mix until everything is well coated.  Spoon ingredients inside Swiss chard leaf and cut avocado slices on top.


Place macadamia nuts in small food processor and process until smooth.  Add the rest of ingredients.  Serve with fajita.
